Mashed Potatoes for One

Forget boxed or frozen mashed potatoes. Making a small batch of mashed potatoes is easy.
  • 1 baking potato
  • 1 tbs butter
  • ¼ to ½ cup milk
  • White pepper to taste
  • Salt to taste
  1. Scrub the potato and remove any bad spots
  2. Cut into 1" chunks
  3. Place chunks into a good sized pan and cover with cold water
  4. Liberally salt water and bring to a boil
  5. Boil potatoes until fork tenter (about 10 minutes)
  6. Drain potatoes then place back into the hot pan. Allow steam to escape
  7. Add salt and pepper and mash in hot pan. When mashed completely add butter
  8. Add milk until smooth and serve
