A white sauce, or béchamel, is an essential tool for eating well at home. It is one of the five mother sauces and most recipes usually make way too much. Here is a recipe for 2.
Ingredients
  • 1 Tbs Butter
  • 2 tsp flour
  • ½ - 1 cup cold milk
  • salt and pepper to taste
Instructions
  1. In a heavy sauce pan over medium heat melt the butter
  2. Add the dry ingredients and stir until combined. It should "foam" a bit. Don't over cook. Just get the butter and flour combined.
  3. Add the cold milk. Start with ½ a cup. More than likely this sauce will be too thick so you will have to add a bit more milk. Remember, you can always add milk but you can't take it out.
  4. Bring the sauce to a boil and reduce the heat to low. Cook for a minute or two and adjust the thickness and seasonings.
