Basic Frittata for One

2 eggs, well beaten 4-6 oz cubed ham 1 green onion (or 1 tbs) minced green onion 2-4 tbs freshly grated parmesan cheese ¼ cup chopped olives (optional) ½ tsp dried basil 1 tsp olive oil Preheat oven to 350 F In 8 inch, oven ready non stick pan sauté ham until slightly browned Add green onion, olives, and dried basil and sauté for 1 minute Add beaten eggs, staring slightly then cook until eggs are set on the bottom (about 1-2 minutes) Sprinkle the top with cheese then place entire pan in the oven Bake at 350 F for 4-6 minutes until eggs are cooked through.
