Grits for Lent (or anytime)

- ¼ cup stone ground or course grits
- ¼ cup rich milk (4%) OR ½ cup water and ½ cup half and half)
- 1 tbs butter (or more to taste)
- ¼ tsp salt
- Mix the grits, liquid and salt together in a heavy pan.
- Bring slowly to a boil then reduce heat and simmer on low for a minimum of 20-30 min
- You don't have to cover the grits but it helps them cook a bit faster
- After 20 minutes check grits for doneness. Do not hesitate to add more liquid if necessary
- Stir OFTEN as grits will stick
- When grits are the desired consistency and doneness add butter
